    Raspberry White Chocolate Scone/Loaf

    I've just updated a family favourite, you know to make seem healthier (and it needed to be a little sweeter)
    Raspberry White Chocolate Scone/Loaf
    3 cups flour
    3 teaspoons double acting baking powder
    1 teaspoon salt
    cup sugar
    Additional sugar for topping (about 1/4 cup)

    1 egg
    cup orange juice
    1 cup milk
    cup melted butter

    cup frozen raspberries
    4 squares of white bakers chocolate

    Sift, then measure flour into a large bowl add baking powder and sugar. In another bowl combine egg, orange juice, milk and butter, mix thoroughly. Break chocolate into inch chunks. Add to flour. Take frozen berries and break apart. Toss berries in flour until coated. Add the liquid ingredients. Stir briefly until combined. Place in a lightly greased eight inch round cake pan. Sprinkle sugar generously on top. Bake at 350degrees for about 50 minutes.

    The updated version:
    Dry ingredients -
    2 1/2 cups flour
    1/2 cup ground oatmeal
    1 tablespoon ground flax
    3 1/2 teaspoons double acting baking powder
    1 teaspoon salt
    2/3 cup sugar

    The wet ingredients are the same, the oatmeal and flax disappear into the mix. I find it a less prone to sogginess than the previous version (the amount of liquid released by the berries can be variable).

    Catharine,

    This looks great I'll have to try it (maybe both versions). But I have never seen 'double acting baking powder' in shops DownUnder.

    Does anyone have any ideas of what an appropriate substitute may be?

    yes, ground flax seeds. I have been using whole flaxseeds, but just read in a new cookbook that whole seeds just (ahem) pass through. So l just popped some in our coffee grinder. It seemed to work fine. l don't think the flax changes the taste (texture at all it really is just for the health benefits of flax.
