Is there a way to format a cell in a table like a cell in an excel spreadsheet. I am trying to emulate the numbering format with things like dates & phone #'s. Thanks for the help!

No, table cells in a Word table don't have a number format property.
You can embed an Excel worksheet in a Word document.
