    What is the difference between Puff Pastry and Filo dough...thanks in advance

    Puff pastry is made by covering a layer of dough with butter, then folding it, rolling it, folding it again etc. so that the end result is a many-layered dough with butter between the layers. In the oven, the dough expands because of the layered structure.

    Phyllo or fillo or filo pastry is made by stretching a single layer of dough until it is very thin. It is harder to work with than puff pastry because it dries out very quickly - you have to cover it with a damp cloth if you're not working with it, and it breaks very easily.

    In some recipes, you can substitute one for the other, but in general the result will be different.

    An example of how they are different is to think about Baklava ... (yum!)

    It uses filo pastry and you brush butter between the layers of pastry to get them to 'lift and separate' when baking. You could be forgiven for thinking that this would produce the same effect as puff pastry which already had the butter in the dough. Using puff pastry here would produce a heavier end product and not be as nice as the airiness of the filo.

    Hmmm. I think I'm off to the kitchen.
