How can I make the size of all of the text in Outlook larger (messages received, sent, files, etc.)?
    Thanks in advance.

Text in message lists, not in the messages themselves, right? Those sizes are set in the View for the particular folder.

In 2003, try View > Arrange By > Current View > Customize Current View

(Not sure where this is in 2007)

Note that there is a different view for Sent Items than most other mail folders.

In 2007, use View | Current View | Customize Current View.

    Joe,
Doesn't work for the file text (i.e., Inbox, Sent,etc.).

Do you mean the list of files, the preview pane, or when you open a file?

I think you'd either have to set a smaller screen resolution in the Settings tab of the Display Properties control panel, or click Advanced and specify Large (120 dpi) as DPI setting.
