    Please forgive basic question - but I'm very new to this and the MS help is anything but.

    We run Windows SBS 2003 with 5 current users.

    Charlie has left the company and been replaced by Fred.

    Fred is using Charlie's account, which isn't ideal.

    How do I replace Charlie with Fred plse?

    You set up a new domain account for Fred using "Active Directory Users and Computers", and all the other stuff like a home drive, perhaps a logon script, as so on.
    When you're happy that this all works, then you delete Charlie's account, and perhaps his data files (or move them to Fred's home drive).

    That's all jolly fine, but there are ever so many other questions, like "Are you using the Exchange server?", "Who set up the five accounts in the first place?", and so on...

    Personally, in your position I would get someone in who has done this sort of thing for a few years, because trying it yourself with not much knowledge is likely to result in significant puzzlement, if not unhappiness...
