I have heard there is a way to replace the Excel 2007 ribbon structure with the classic 2003 and earlier menu structure. Is this true and how do I get it? If not, can I dump those huge icons and get my screen real-estate back? If I have to suffer with them, can I change the visible ones with others that are more practical for me, and even suppress certain ribbons that are useless? Thanks!

You can use a free add-in, UBitMenu, to give you Office 2003 style menus within the Office ribbon for Excel, Word and Powerpoint

You can also recover most of your screen real estate by minimizing the ribbon, although you need to be aware that it seems to do it to all Office apps.
