I teach an Excel spreadsheet course. One of my students turned in a spreadsheet with something I've not seen before. Said she clicked on something but doesn't know what. Does anyone know what causes the extra stuff above the column headers and left of the row numbers? (See attached worksheet)

    Yes.
    It has Outlines turned on.
These allow the data to be compressed to show various levels of totals.
The + - allow expansion of levels
The 1, 2, 3 allow all levels to be compressed to different levels of Totalling.

You will find it on the Data Tab under Group

You could also turn it on with a key sequence

    [ALT D] G A

    Off with [ALT D] G C
