Using Office 2007 prof. I have encountered the following mystery

I am doing mail merge and want to use a reference line in my letter containing some data from the mail merge. I want the reference line to be underlined and bolded.
It shows up properly in print preview and I can print individual pages with the mail merge data and formatting as required but once I merge the document, any printing afterwards loses the underline. Strangely the bold remains.

Any reason why merge fields cannot be underlined or crossed out?

I've not seen that behavior in 2007. Is it possible the merge field codes have tangled up with the formatting information? Try looking at the merge fields and their formatting and see if there is anything odd there.
