I have lots of processes running when I check in the task manager. I'd like to clean this mess up. How do I do that, and what do I need to leave alone.

Try Black Viper web site. This site shows all services and explanation of them. You might start there.

Black Viper is a very good site.
Read through what information he has carefully. You might want to make a list of what services you are disabling so that you may restore them if you find they are needed. Make sure that you run through the "dependancy tab". Many services rely on others for functionality.

Invest a little time and energy in a well thought out BACKUP regimen and you will have minimal down time, and headache.
