    I have a large excel spreadsheet with many different kinds of agreements - I can sort by agreements, but how would I pull out all the confidentiality agreements and put them on a new worksheet

    You would use an advanced filter for this operation. Make sure you select the "copy to" option. Here's a LINK to an introduction on the subject.
