Managing multiple e-mail accounts in Outlook

Gmail, Hotmail, Yahoo Mail, Outlook — these days it's common for PC users to have multiple e-mail accounts on multiple e-mail systems.
With a bit of tuning, Microsoft Outlook can become Central Station for all those accounts.

I wish there was a way to turn off the default email in Outlook and make the From be whichever account I am in at the time. Kind of like the way it does when using Reply or Forward. It is a major pain to have multiple email accounts but have to keep changing the From because the default is for one, but you are working in a different account from the default. Anybody know of a way to do that? (Thunderbird used to do it this way, but it is not an option for me at this time.)
