Starting last week many, if not all, employees on our Exchange server have suddenly discovered that common everyday emails were suddenly being routed into their Outlook Junk e-mail folder. Not all email, but a lot of messages from regular providers in the past were suddenly ending up in the Junk e-mail folder. Anyone have any idea if Microsoft made some change in Outlook that would trigger this. Or is there an easy way to overcome it?

Any of the Microsoft junk mail filter updates has the potential to do this. Also, if you use spam filtering on the Exchange servers changes there could be the culprit. You'd need to check with your Exchange admins to see if anything changed there.
