Can Windows 8 be installed using VMware? I prefer this approach to using a dual boot, better fencing from Win 7.

Yes. I have it (Windows 8 CP) up and running (64-bit version). Windows 8 CP is Best installed from the ISO download. (Burn the Windows 8 ISO file to a disc and install. No Product Key is needed). Use "Windows 7" as the OS of choice (Must have VMWare version 4 or higher).
The following link may be of assistance: http://www.intowindows.com/how-to-in...rtual-machine/
If Windows 8 CP installer insists ona Product Key, use this one: 6RH4V-HNTWC-JQKG8-RFR3R-36498

If a problem has no solution, it is not a problem to be solved but a fact to be coped with over time (Donald Rumsfeld)
(My Setup: Intel Core i7 CPU 860 @ 2.80 GHz; Win 8 Pro (64 bit); 8GB RAM; OCZ Vertex 4 SSD (SATA III); WD Velociraptor 300GB; WD "Blue" 500GB; ASUS 260GTX Graphics Card, Office 2013 Prof (32-bit); MS Project 2013; MS Visio 2013; Acronis TI 2013 with Plus Pack, NIS 2013, etc)
You will need a product key for the Consumer Preview. Its DNJXJ-7XBW8-2378T-X22TX-BKG7J, and its on the download page.
EDIT: You need a product key if you boot from the DVD and install. You do not need it if you run setup.exe.
