I need to calculate how many days leave staff are entitled to.

Leave entitlement is counted from their last birthday month.

I have birthday and today's date, but I am having trouble with a formula.

You didn't supply specific calcualtion parameters so here's a first shot at merely calculating the number of month not counting the day of the month.
=((YEAR(B1)*12+MONTH(B1))-(YEAR(A1)*12+MONTH(A1)))

Update: if you want to account for the day of the month use:
=((YEAR(B1)*12+MONTH(B1))-(YEAR(A1)*12+MONTH(A1)))-IF(DAY(B1)<DAY(A1),1,0)

3. Sorry I wasn't very clear was I.

What I have is a table of staff names + column with date of birth of each.

All I really want is this year's birthday date in another column for further calculations.

4. If the person's birthdate is in Cell A1, the birthday for the current year is:
=DATE(YEAR(TODAY()), MONTH(A1), DAY(A1))
