    Office button (top left), Excel Options (bottom), Proofing, Autocorrect Options, delete second entry in table at bottom (Replace: (R) With: ).

    Strictly speaking, the following doesn't KEEP Excel from changing (R) to the registered trademark symbol, it undoes the change.

    After typing (R) and Excel changing it, click undo (or ctrl+Z) and Excel will UNDO the last action. In this case, the last action was changing (R) to registered trademark. The fact that Excel did it doesn't matter.

    Or perhaps modifying the auto correction with brackets to: "Replace [R] With " so it will still be available.
