    35 language updates!

I just upgrade from W7 HP to W7U, I now have 35 language updates! Is this to be expected, I am entirely mono lingual (despite a short period as a linguistics major ), do I in anyway want these??

Just because you don't know where you are going doesn't mean any road will get you there.

Multilingual User Interface (MUI) Language Packs and the ability to switch between them is one of the 'advantages' of Ultimate/Enterprise over home Premium.

You don't need to apply the updates, unless you plan to use Windows in any of those languages. In Windows 7 they show up only for Ultimate edition, I think. In Windows 8 they show up at least for 8.x Pro.
