Those are previous configurations that worked (hopefully). If you've ever had a problem starting NT/2000/XP, you will have seen the "Last Known Good" menu that allows you to extricate yourself from deep doo-doo. It's essentially the last registry hive for a particular user that booted completely.

I don't believe the older copies are trimmed automatically.
