    My favourite method of preparation is to steam them lightly, cover them in a vinagrette and leave them to cool. Delicious.

    I,don`t know what they put in soup in the U.S.
    But in Holland(Europe)besides the other stuff they put in rings of leek.
    So,if you see any green rings in your soup,that`s the leek.
