Where are all of the forms that Word uses stored? I know that I can access and create Word Commands....

They are stored in Winword.exe or an Office .dll file like FM20.dll or MSWORD8.olb. You can't see them in the IDE.

The only way to change the way a built-in form appears is to either create a userform that looks like it (and replicates
its functionality) and "trap" it with a sub of the same name as the menu command --or use the Windows API to modify
"aspects" of the form -- not an easy thing to do and maybe impossible with Word97 because 97 is based on the
VB5.0 object model which does not support Callback functions which are required in order to do what I think you might like to do.

    Whew!

What I'd like to do is "Steal" a couple of the forms so that I don't have to re-invent the wheel.

I would like to create my own INSERT TABLE button that asks the user "how many columns/Rows" and generates that table with specific autoformatting, sizing, cell formatting, etc.

As Kevin's response indicated, you can't 'steal' the built-in Word dialogs, in that you cannot further customize these to your liking.
If you want a customized version of a built-in dialog, you will need to build your own from scratch, and intercept the built-in Word command that triggers the display of that built-in dialog in order to display your own custom-built dialog (userform) instead.
