    Sweet Potatoes

    Tired of candied yams? This salad is a good and refreshing way to serve sweet potatoes for Thanksgiving or other holiday meals.

    3/4 pound of sweet potatoes (yellow, orange, whatever), peeled and cut into 1/2 inch dice

    1 TBSP white wine vinegar
    1 1/2 TBSP Dijon-style mustard
    1/4 cup oil (whatever kind you like in salad dressings)

    1 cup thinly sliced celery
    1/4 cup thinly sliced red bell pepper
    1/4 cup thinly sliced scallion (AKA green onion in these parts)
    salt and black pepper to taste
    attractive lettuce leaves on which to pile the salad

    Steam the diced potatoes over boiling water for 6 to 8 minutes, until tender. Transfer to a mixing bowl and let cool. In another bowl, whisk together the vinegar and mustard, and then slowly stream in the oil, whisking constantly to emulsify the oil in the vinegar-mustard mixture. (It won't turn into mayonnaise, but it should have a creamy texture and not separate.) Add the dressing and sliced vegetables to the potatoes. Add salt and pepper to taste. Serve on lettuce leaves.

    According to the source, the February 1991 issue of Gourmet magazine, this recipe serves 2. I suspect it will feed 4 as one of many holiday side dishes, but if you have some extra helping hands for the slicing, there's no harm to doubling it.

    1 question I thought Yams and Sweet Potatoes are different things?

    I've read that what we call yams in the U.S. are apparently really a kind of potato. But I guess the main point is that either one can readily substitute for the other.

    I believe I read once that (real) yams are native to Africa. African slaves in America found a vegetable that was similar to yams - the sweet potato - and called them yams after the vegetable they knew. A similar thing happened with English colonists in America and the robin - named after a similar but unrelated European bird.
