    Peanut Butter Cookies

    Does anyone have a Peanut Butter Cookie recipie they'd like to share? My husband says mine aren't "peanutty" enough. [sniff]
    Any suggestions?

    I know what you mean about not being "peanutty" enough, so I've tried several different peanut butter cookie recipes and my family seems to like this one the best (so far).

    Ingredients

    1/2 cup shortening
    1 1/4 cups packed light brown sugar
    3/4 cup peanut butter
    1 egg
    3 tablespoons milk
    1 tablespoon vanilla extract
    1 3/4 cups all-purpose flour
    3/4 teaspoon baking soda
    3/4 teaspoon salt

    Directions
    1. Preheat the oven to 375 degrees F (190 degrees C).

    2. In a medium bowl, cream together shortening, brown sugar, and peanut butter until smooth. Stir in egg, milk, and vanilla. Combine flour, baking soda, and salt; stir into the peanut butter mixture until well blended. Drop by rounded spoonfuls onto ungreased cookie sheets.

    3. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

    I've used a few different recipes and found they usually ask for too much flour and not enough peanut butter. So I have just started adding a bit more peanut butter to the recipe. ALSO I found that using crunchy peanut butter instead of creamy often gave them that extra "peanuty" taste that you don't get with regular peanut butter.

    Ed,
    Where did you get my Grandma's cookbook?
    That's the best recipe I've seen so far.

    But here's a little secret that grandmama used to include:
    If you normally have unsalted peanut butter on hand, try adding a dash of salt. It brings out the the peanut flavor a little better, though at the price of having slightly flatter cookies.

    Actually it is from a hand transcribed recipe book that I got from my mother - she probably got it from her mother <img src=/S/shrug.gif border=0 alt=shrug width=39 height=15> cannot ask either one - they have gone on to the big kitchen in the sky. <img src=/S/angel.gif border=0 alt=angel width=15 height=21> <img src=/S/chef.gif border=0 alt=chef width=19 height=22>
