Do you mean the default theme for your web, or do you want to alter an existing theme?

Choose "format, theme" from the top pull-down menu. When the box pops up, make sure "all pages" is checked. Highlight the theme you want to use and click OK. This will set that theme as the web default.

If your pages currently specify a theme implicately, you'll have to change those pages by hand. You can highlight multiple pages in folder view, and do the same as above, checking "selected pages" instead of "all pages."

That seemed to do the trick!
    Thanks!
