Changing sender name in email headers (2000)

Is it possible to change the name of senders in the 'From' line of emails in Outlook 2000? I keep receiving emails from people who are using other people's email accounts, and the name in the header is confusing. When I receive these emails, I'd like to rename the sender so it's easier to find and file for future reference. I know you can rename the subject, but when I try to rename the sender, it changes OK initially, but the changes aren't saved. Is there a way of doing it?
    Thanks for any guidance.

I think the only way round it is to:
Right_click the message and select Options
Either select a Contact or type in a Category, Close, Save, then add the respective field to the view.

It's certainly a good workaround, thanks.
However, the solution is probably too fiddly and the problem is probably minor enough that I should wait for another version of Office to fix it :-)
