    Searching for the Ultimate Salsa

    Alas, I have a taste for hot salsa, and due to this I always have difficulty finding something to my liking at the local market. I've dabbled with a few recipes for salsa and not yet met one that I really wanted to keep. Thus, I am calling on my fellow Loungers to help me fulfill my need for capsacin! <img src=/S/grin.gif border=0 alt=grin width=15 height=15>

    Well, you could always take whatever recipe you like and substitute habanero peppers for whatever peppers the recipes call for. I tried to make a hot pepper sauce out of habaneros once - I couldn't even walk into the kitchen when they were cooking without coughing and I had to scrub the pan repeatedly before I could no longer taste the peppers in any food I wanted to cook in that pan. And I'm not a hot pepper wimp - I love hot foods.

    I think salsas have to be freshly made so the ready made ones are not my favorites.

    For everyday use try this
    4 large tomatoes (I skin them but only becase I am funny about tomato skin!)
    1 red onion
    1 fresh chilli (as hot as you like)
    handful of coriander
    Juice of 1 lime
    1 tbsp olive oil (Optional)

    Place all non liquid ingedients on chopping board and set about them with a large sharp knife until everthing is reduced to similar sized pieces and well mixed. Pop in bowl and add lime and oil if using.

    Depending on the chilli you use and the ripeness of the tomatoes this is never quite the same twice. If you use dried chili peppers I like to soak them in boiling water for 30 mins or so first to soften them but on the whole I prefer fresh for salso

    Thanks Sue, I don't believe I have ever used olive oil before. Do you prefer with, or without the oil?

    I do agree with you that it needs to me made fresh, though. I'm going to give this a whirl with the habanero suggested by Lee, and hope that I don't wind up in trouble.

    I personally prefer to add the oil - my totally unproven reason being that it somehow distibutes the hot chilli flavours better and I prefer the oil in there if I am going to be mopping up my plate with bread!

    Sue, thanks for the recipe - after a sliced thumb and the addition of two habaneros in addition to the jalapeno, I've found the hotness I was looking for. Hot enough that no one else in my family will dare eat it, so it's all mine!!
