    Dip recipes

    We've been reading here in Australia that most of the manufactured dips are made up largely of cream cheese with only a very tiny percentage of the actual flavour e.g. avocado, shrimp etc. So I've decided to make my own. Does anyone have any favourite recipes?

    I can't help but think of that beer commercial where they put the bug zapper over the dip...

    Once upon a time, everyone's idea of a great dip was a package of dried Lipton onion soup mixed with a pint of sour cream. These days, there are at least 5 kinds of salsa at the local party snack headquarters (Trader Joe's), 5 flavors of hummus, roasted red pepper dip, three or four kinds of guacamole... the options seem endless.

    But do I have any recipes, sadly, no...

    Wow - wish we had a Trader Joe's over here. Oh well, no doubt it will arrive eventually - we have Starbucks and McDonalds.

    Well,
    be careful for what you wish for, you might get it ...

    However I can highly recommend the "package of dried Lipton onion soup mixed with a pint of sour cream". Doesn't have to be onion - experiment!

    Don't think we have Lipton but we do have Maggi and Continental dried soup so will try that and see how it goes. Sounds interesting. Thanks for your input.

    I may have posted this before - sorry, its one of our favourites.

    Eggplant Dip
    1 Eggplant (Aubergine)
    1/2 white onion
    1 Lemon
    Oregano
    Cayenne Pepper
    Bread Crumbs
    Olive Oil

    The measurements on the rest ingredients really depend on the size of the eggplant and the texture you want for the dip.
    Roast the eggplant (aprox 45 minutes). Scrape interior of eggplant into a blender. Add 1/2 white onion finely diced. Blend until the onion disappears. Add 1 -2 tsps Oregano and about 1/4 tsp Cayenne Pepper (this isn't a "hot" dip, the goal is to "wake up" the flavours). Add the Juice of 1 lemon (If you have a big eggplant you may want more juice). Blend. Add bread crumbs to thicken the dip (watch out - they keep on thickening) to the desired texture. Add 1 - 3 tablespoons Olive Oil.
    Serve with flat breads, like a pita.

    Thanks Catherine - that looks delicious. In particular, one that my vegetarian daughter will enjoy.
