    spinach dip

    Spinach Dip

    4 servings
    2 pts per serving

    1/2 C. non-fat sour cream
    1/2 C part-skim ricotta
    2 tsp. fresh lemon juice
    1 garlic clove
    1/2 tsp salt
    1/4 tsp ground pepper
    half of a 10 oz pkg frozen chopped spinach, thawed and squeezed dry
    1/2 C water chestnuts
    4 scallions thinly sliced

    Put all in a processor, blend. Cover and let stand in refrigerator for at least one hour.

    Non-fat sour cream?

    I've never heard of that down under, is that for real?

    I've seen it at US supermarkets but I'm not sure I would want to eat it.

    Yes, it is for real and it is good, though not as wicked tasting as the real thing! We also have light and low-fat.

    I keep forgetting to sign in when I come to this forum! My foggy brain vaguely remembers that yogurt with lemon juice can be substituted for sour cream? Can anyone verify that?
