    Anyone have a good eggnog recipe?

    I thought I would try to make eggnog this year.... anyone got a good recipe?

    I always thought eggnog was something you purchased in the refrigerator section at the market. The idea of making one's own raises the messy question: does it have raw eggs in it??

    I go alone with Jefferson, buy a container of eggnog but you also need to buy a fifth of Bourbon. Put the egg nod in the fridge and drink the Bourbon.

    Now running HP Pavilion a6528p, with Win7 64 Bit OS.

    Used to make it with raw egg, milk and cream, nutmeg, vanilla, bit of sugar and liquor............but not any more!! <img src=/S/nope.gif border=0 alt=nope width=15 height=15>

    I've heard you can buy eggs that have been flash pasteurized in the shell without cooking them, 'though I've never seen such a thing where I shop. Maybe soaking the little blobs overnight in a rum bath would kill the germs? Actually, I think I read directions for how this is done in professional kitchens (see The New Making of a Cook : The Art, Techniques, And Science Of Good Cooking), but the temperature tolerances are rather narrow, so I can picture accidentally making a few omelettes. <img src=/S/laugh.gif border=0 alt=laugh width=15 height=15>

The first link tells about this process. And - you can actually purchase them on the second website! Actually, I like the idea of the rum bath better!! <img src=/S/grin.gif border=0 alt=grin width=15 height=15> After doing that, I doubt it would make any difference what state the egg is in................. <img src=/S/rofl.gif border=0 alt=rofl width=15 height=15>

    Beats me what they do with eggs here (USA). I don't get too concerned with it. I was just hunting for information about pasturized eggs for those who may have a health risk or a worry about it <img src=/S/smile.gif border=0 alt=smile width=15 height=15>. For myself, I have used the simple eggnog recipe for many years and am careful to wash my hands and eggs before cracking. I don't use eggs that already have cracks in their shells from jostling home from the store for anything but a cooked recipe - cookies, etc. (And I still eat snow ice cream when I can get some fresh clean snow!! <img src=/S/grin.gif border=0 alt=grin width=15 height=15> ) We are all different in our tastes and choices....guess that is what makes the world go round!! <img src=/S/yep.gif border=0 alt=yep width=15 height=15> Have a terrific New Year of 2004 <img src=/S/exclamation.gif border=0 alt=exclamation width=15 height=15>

    I have no idea, but our results are not so good. Consumer Reports published its survey results on chicken last January, and found that 49% harbored either campylobacter and salmonella bacteria (5% had both). Basically, we have to behave as though all chicken is out to get us, because many of the strains of bacteria in our chickens are resistant to antibiotics.

    As for eggs, I don't know the statistics, but we are advised to always cook them to at least 160 degrees F. (Here's the USDA's egg safety fact sheet (PDF).)

    Frankly folks this European is bemused, bothered, and bewilldered. I've been eating raw eggs all of my 68 years without ill effects, and have every intention of continuing to do so! Any way the alcohol in egg nog should knock out most of the germs.

    I wonder if you have as strict regulations as we do regarding poultry hygiene and egg grading? Of course there's a small risk with even the tightest control system, and I wouldn't give raw egg to a pregnant woman; but I do think we're all getting just a little too paranoid about hygiene, and this is actually having a negative effect by lowering our resistance. Make your egg nog the proper way and enjoy it.
