I KNOW that there is an option somewhere in the Properties of the Task Bar, Display, etc. that will take the Log Off option off of the Start Menu. Of course now that I need to find it, that option is nowhere to be found. And if I google "show logoff" I get a bunch of crazy registry editing tips. Can anyone guide me in the right direction. Thanks a mill.

TweakUI includes the option. It is one of the Explorer section options (Allow Logoff on Start Menu)

Hey - thanks for writing back. We actually figured something else out. Using the Microsoft Managment Console, we added Group Policy snap in and took off the "show log off" option. We may have set something else before (in our image) so that the Show Log Off option was not available under Start | Settings | Taskbar and Start Menu | Start Menu tab | Advanced.
