    Maybe you can help me with this. I sent a book of poems over to Central Services to have a few of them scanned so that I

    Assuming that the pdf's contain mostly text, you can use the "Select Text" tool select and copy what you want. Then open Word and Paste Special (as formatted text). You will probably have to do some tweaking as far as formatting goes, but all of your text will be copied into Word.

    It sounds as though they created a scan, but did not perform any OCR (optical character recognition) on the scans to create editable text. If this is a service they provide, your fastest option is to ask, but if you have to do it yourself, your fastest option might be to retype the text. I guess it depends on whether they are haiku or sonnets...

    Extracting text from a PDF document is not recommended. If possible, try to get the files in a more usable from from the source. I'm sure your "Central Services" can supply alternate forms of the documents.

    BUT, if all else fails, you can extract raw text from a PDF using GhostView and GhostScript http://www.cs.wisc.edu/~ghost/. You'll need both GhostScript and GSView installed (both are free). Once installed, if you open the PDF using GSView, you can choose Edit->Extract Text.

    The output is just plain text, no formatting.

    I suspect that this will not work if the PDF files contain scanned images. Most OCR products will accept PDF files as input, but if the original poster doesn't have OCR software then they will have to either go back to "Central Services" or retype the text.
