Without running a macro a simple way is to change the view once the email is opened. On the View menu, Select Text size, then click Largest, which increases the font size. alternatively add a specific coloured flag to show that you have read the item, which is under the Action, Follow-up menu. What kinds of changes would you want to make? The View settings contain your font formatting (typeface, size, color), and the Automatic formatting for Unread messages (which can be in a different typeface, size, color -- as well as bold).
