Although it's some time since I worked in this area, it sounds to me that you are thinking of spanned volumes. Here's a Microsoft article about the topic - lots more on Google.
The thing to bear in mind is that if you lose one spindle, you lose the data from all three disks, and have to recreate from a backup...

Hold on John, I believe spanning volumes is for a single box with several hard disks. The NAS devices are like 3 seperate servers.

Now that I think about it, there might be a way. If you mount 2 of them to the first one via nfs, it will appear to a 'user' as one server. Lemme know what you want to do exactly and I'll get more detailed.
