Foreign characters - what field format? (AccessXP)

I am importing some names from a TXT file into a table in Access. Some of names have foreign characters. Attached is an example.

When I import it into Access the foreign characters change. I have tried using a TEXT field, and a MEMO field, but neither work. Is there a solution to this?

    Nouvelle Cal

When I was importing the text, the "Code Page" on the Import specification dialog box was set to "Western European (DOS)".
When I changed this to "Western European (Windows)" it all worked.
I think the "Code Page" attribute is defaulted to each database. Once I changed it in one database, then all my import specifications were updated.
However, when I opened another database, the "Code Page" was set to "Western European (DOS)". So I need to update it everywhere.
