    header/footer (word 2000)

I need a different header on every page. How do I do that? The only selection are different odd and even and different first page.

Are the headers completely arbitrary or do they follow a pattern based on the content?

If you want to enter arbitrary content, separate your pages using Section breaks rather than page breaks. When you open the header, find the button on the Header/Footer toolbar which copies the Header from the previous section (Same as Previous or Link to Previous) and disable that feature so you can customize the Header for just that section.

If it's going to be different on literally every page, why put it in headers at all? The point of headers (and footers) is to automate stuff being repeated from one page to another.
