    Delete the period after the quote as you did with the Tom Paine quote that should take care of it.

    English is not my mother tongue, but I don't think you should use a period if there is text following the quotation. You could use a comma:

    Hans is correct. British and American English usage requires that a quotation end with a comma in your example, where the speaker is identified at the end.

    MS-Word capitalizes the first letter in the next word after the close-quote in your example because of the period. Word assumes (correctly) that the punctuation mark denotes the end of a sentence. A new sentence ("Said Jack") means the first word ("said") needs to be capitalized. MS-Word is behaving precisely as it should. Correct the punctuation, and your problem goes away.

    Word tries to out-think me in the manner described, and in other ways. I seem to recall that if I hit Undo or Ctrl+z immediately upon noticing the Word change, it goes away.

    That is correct. You can undo AutoCorrect / AutoFormat As You Type actions immediately after they occur. In Word 2002 and higher, you also get a Smart Tag with various options if you hover the mouse pointer over the location where the action occurred. This lets you undo it even if you continued typing, without undoing the typing.
