How do you create a custom view that shows only today's appointments/events in a public folder?

We use a public folder to show time off and out of office events. The problem is when a large number of people are out, it is difficult to read.

I changed the view to a table view, but it shows the entire list. This is compounded by people adding recurring events like meetings or days off.

I want to customize the view to show only the appoints/events that include today. When I edit the filter, it says "starts" or "ends" today, not "includes" today.

Am I missing something? Is there and easy way?
