Peeled and chopped the beets into fairly large sections.
Put in a casserole dish (with a lid) with chopped fresh mint (about 6 leaves).
A tablespoon of butter.
Baked in a 350 degree oven until tender.
Okay - I forgot them so they were probably in there too long, but they were still delish.
