    Parsley Salad

    Don't think I've posted this one before. We love it, a real vitamin packed salad that will keep about 3 days.

    1/2 to 1 cup of sunflower seeds (can be roasted or raw)
    1/2 cup fresh lemon juice
    1 tablespoon sugar
    1 tablespoon oil (your choice)
    Mix the lemon juice, sugar and oil. Then add the sunflower seeds. Set to one side while you chop the following:
    One mild onion (a fine dice)
    2 bunches parsley (also a fine dice)
    4-6 tomatoes (a larger dice)
    Mix onion, parsley and tomates, toss with dressing. It always seems better after an hour or so when the flavours combine.

    Note: all measurements extremely approximate - depending on variables such as size of parsley bunches and tomatoes and how strong the onion is. Fool around with it until you find a balance you like. Trust me - it's delicious!

    Take out the sugar and you've got an Atkins-friendly Tabbouleh/Tabouli salad. <img src=/S/grin.gif border=0 alt=grin width=15 height=15> (Your spelling may vary!)

    Sounds good! I had been thinking that I may not plant parsley this year but after reading this recipe, I have changed my mind!! In the meantime, I've got to see if I can locate some fresh parsley in the grocery! Thanks! <img src=/S/smile.gif border=0 alt=smile width=15 height=15>
