This was an experiment and was very successful so I am going to give it a name and give you the recipe.

<big>Magic Forest Trout Fillets with Mediterranean Salad.</big>

This was done in the morning before the cook but can be done anytime , the longer the better.

Olive Oil Dressing
Place 100ml of extra virgin olive oil in a bottle and to it add:

1 peeled whole clove of garlic
1 red chilli, deseeded and chopped finely into 2-3mm cubes
1chunk of peeled root ginger and chopped finely into 2-3mm cubes

Take 4 trout fillets, and coat in the Olive Oil Dressing, sprinkle with black pepper and grill for 8 - 10 minutes.

Whilst this is grilling make the

Mediterranean Salad

You will need:

Fresh green leaf salad
Feta cheese ( or Mozzarella if you can't get this)
Green and/or black olives
1 beef tomato

Chop the cheese and beef tomato up to bite size chunks and palce in a large bowl with the salad and feta cheese
Once happy with this drizzle with extra virgin olive oil (not the one above)

When the fish is cooked place on a plate and serve with salad and some extra cold freshly squeezed orange juice
in a glass with ice.
